The seasoned Bra DOP (Protected Designation of Origin) takes its name from a town nearby Cuneo, which was the main market in the past. It is a cheese made from cow’s milk, sometimes supplemented with sheep and goat milk that stand out smells and flavors. The cattle from which the milk must be fed mainly with green forage or hay. The taste is spicy and slightly fruity, the dough is yellow burnished ocher and opaque. The aging times are at least 6 months.
